It seems that celebrations of one sort or another are always happening around here, and there is no exception with the summer months. I’m pretty sure if we didn’t have so many birthdays to celebrate, we’d find another reason to get together and eat CAKE! One of our younger grandkids, Charlie, who also just had a birthday- BIG #6 (yep! we ate cake!) and is getting ready to head to kindergarten (which he is MOST excited about!) was here the other day and it happened to be my moms birthday. When we called her to sing happy birthday, he announced to her that we would be bringing a cake over that evening. 🙂 When I told Charlie we’d have to go shopping to get a cake…he wasn’t so keen. “It’s raining, I don’t wanna go to the store. We’ll just make one”…he says! And it was pouring down rain, so I also was in no hurry to leave the house myself.
So I decided to jump on Pinterest and see if I could find a recipe that I actually had all the ingredients for. I’d not been shopping for several days, so the pantry was a bit bare. However, after looking through several recipes I actually found one that I had every single ingredient for! I was super excited!! (two exclamations= SUPER excited!!)
This cake was sooooooo good!!! It was all but gone when we left my moms house that evening. There were several of us there, but my nephew (23) ate (possibly) 4 pieces… I’m not judging or calling anyone out because seriously…I could have eaten 4 (+) pieces of this cake…EASILY…but I didn’t! 🙂
This recipe called for brewed coffee. I decided, since the icing recipe called for water and I brewed a whole cup of coffee, that I’d use it to replace the water, and I’m so glad I did! It really was delicious!
